These vegetarian fajitas are made with halloumi, a hard cheese that keeps it shape after being fried or baked. An amazing flavourful alternative to using tofu for your vegetarian menus. We also give you a recipe to make your own fajita spice mix as well.


Ingredients

  • Halloumi
  • Bell peppers, any colour you choose
  • Red Onion
  • Black beans
  • Tortillas
  • Fajita Spice Mix: from a package, or make your own here.

To Serve your fajitas choose from these toppings:

  • Sour Cream or yogurt
  • Lime or lime juice
  • Salsa, freshly made or from a jar
  • Tomatoes
  • Cilantro

How to make Simple Halloumi Fajitas

These fajitas are so simple to make, and oh so tasty!

  1. Mix all ingredients for Fajita Spice in a small bowl if making your own.
  2. Heat 2 frying pans to medium high heat with 1 tsp oil each. In one pan add the halloumi strips, in the other pan add the peppers, onions and garlic.
  3. Add the fajita spice mix to the peppers mix, and sauté for 3 minutes.Turn the halloumi over to brown on both or all sides.
  4. Serve with warm tortillas, salsa, sour cream (or plain yogurt), chopped tomatoes, cilantro and a lime wedge per person.

Halloumi Fajitas

Ingredients

  • 250g Halloumi Cheese, cut into strips
  • 1 Green Pepper, sliced
  • 1 Red Pepper, sliced
  • 1/2 Red Onion, sliced 
  • 1 recipe of Fajita Spice, below
  • 12 medium Tortillas
  • Sour Cream (to serve)
  • 1 lime, cut into wedges (to serve)
  • Salsa, freshly made or from a jar (to serve)

Fajita Spice Mix

  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Cumin
  • 2 tsp Oregano
  • 1 tsp Cayenne
  • 1 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1 tsp Red Pepper Flakes (optional, if you like spicy)

  1. Mix all ingredients for Fajita Spice in a small bowl.
